Oops…I orginally started this blog as a kind of recipe book to record all the things I’ve been cooking so that I remember how I made it when I want to revisit a recipe. But things have gotten so busy I keep forgetting to update this blog. Gonna start making more of an effort…
. . . . . . . . .
I’ve been getting really into eating Avocados lately. I always hated the taste of them before but I’ve seemed to have had a change of taste and now I crave them! On a recent trip to Sam’s Club I bought a huge bag and now am left with the task of finding new ways to eat all my avocados that don’t consist of cutting them up and putting them in a salad.
I whipped up this guac recipe after class today and it surprisingly tasted great!
1 ripe Avocado
1 tsp lime juice
3 tbs chopped tomato
1 tbs chopped cilantro
salt & pepper to taste
– Cut the avocado in half and scoop the meat out of the shell with a spoon. Mash up the avocado in a bowl with a fork. Stir in the rest of the ingredients.
