I just realized how often I eat bananas; just alone on this blog, this is probably the 4th, maybe 5th banana recipe post..?? I would have never pegged it as my favorite fruit but apparently it is! Hmm…well, anyways…Banana Pudding yumm…Just look at it.
2 c milk
1/2 c sugar, a little less if you want it less sweet
4 tbs corn starch
1/4 tsp salt
1 tsp vanilla extract
1 tbs butter
banana slices (2 – 3 bananas)
Bring a small pot of water to a simmer on the stove. In a glass bowl, whisk together the egg, milk, sugar, corn starch, and salt until smooth. Place the glass bowl over the pot to create a double broiler. Stir consistently until the mixture thickens, about 15 min. Remove from heat and add the butter and vanilla. Mix until the butter melts. Refrigerate until cool. The mixture will continue to thicken as it cools.
When cooled, fold some whipped cream into the pudding. This makes it lighter and more airy. (I make whipped cream by whipping together 1 c whipping cream + 2-3 tbs powdered sugar)
Assemble by layering the wafers, banana, and pudding.
